Carolino rice – 500g
Water/stock – 1.2 times the volume of the rice.
Mushrooms – 700 g
Onions – 100g
Garlic – 2 cloves
Rosemary – q.b.

Cooking Steps

  1. In a pan saute finely chopped onions in hot olive oil.
  2. Add minced garlic when onions are soft.
  3. Add rice and let it fry for 1 or two minutes.
  4. Add a splash of red wine.
  5. When wine evaporates, add the stock, cover and let it cook in low heat.
  6. Heat a frying pan and add the mushrooms cut in the desired shape. Stir to coat the mushrooms evenly.
  7. After a couple of minutes add a bit of olive oil, minced garlic and rosemary.
  8. When rice is cooked, add the mushrooms and serve with aromatic herbs.
